Brownie Ice Cream Sundae: The Only Method You Need

By Lucas Brooks ยท Page 2 of 3

The Sauce: Glossy and Pourable

Most hot fudge sauces harden on contact with cold ice cream. That's fine for a dip, but for a sundae, you want a sauce that stays soft and pourable. The trick is a combination of heavy cream and corn syrup. The cream provides richness; the corn syrup prevents sugar crystals from forming, which keeps the sauce smooth even after it hits the cold ice cream.

Use a 1:1 ratio of heavy cream to chocolate chips by volume. For every half cup of chips, use half a cup of cream. Add one tablespoon of corn syrup per half cup of cream. Heat everything together over low heat, stirring constantly with a rubber spatula. Never let it boil โ€” bubbles mean the water in the cream is evaporating, which can cause the sauce to seize later. When the sauce is smooth and warm, remove it from the heat. It should coat the back of a spoon but still drip freely.

Pour the sauce just before serving. If you let it sit on the ice cream too long, the cold will thicken it. A slow, steady pour over the center of the scoop gives you that glossy cascade.

Assembly: The Right Order

Start with a cooled brownie square at the bottom of a wide bowl or a shallow dish. A wide bowl gives you room for toppings without everything sliding off. Place one generous scoop of vanilla ice cream in the center. Press it gently so it adheres to the brownie, but don't smash it.

Pour the warm sauce over the ice cream, not the brownie. The sauce will flow down the sides of the ice cream and pool around the brownie, but the brownie itself stays dry and firm. That's the technique that prevents sogginess. If you pour sauce directly on the brownie, it soaks in and turns mushy within minutes.

Add whipped cream if you like, but keep it light โ€” a dollop, not a mountain. A cherry on top is traditional, but optional. Serve immediately. This sundae doesn't wait.

Common Mistake: Overloading the Sundae

It's tempting to pile on every topping in the pantry. But too many wet ingredients โ€” syrups, sauces, fresh fruit โ€” will overwhelm the brownie and make everything slide apart. Stick to two or three toppings maximum. The brownie and ice cream are the stars. Everything else is a supporting player.
