Cinnamon Bundt Coffee Cake: The Secret to a Perfectly Moist Crumb
Building the Streusel Layer
The streusel is more than just a topping here; it’s a middle layer that creates a beautiful swirl. The mistake most recipes make is telling you to sprinkle the streusel all the way to the edges of the pan. Don’t do that. Leave a clean 1/2-inch border around the entire perimeter.
Why? Because during baking, the streusel melts and expands. If it touches the greased pan, it will stick and tear the cake when you unmold it. That border of pure cake batter acts as a seal, keeping the streusel contained in the center where it belongs.
For the streusel itself, I keep the ratio at 2 parts brown sugar to 1 part flour, with a generous amount of cinnamon. The cold butter is cut in until the mixture looks like coarse sand. If you want a crunch, add chopped walnuts. If not, leave them out. The streusel will still be crisp and buttery.
How to Layer the Batter
This is a two-step process. Spoon half of the thick batter into the greased and floured bundt pan. Use a small offset spatula or the back of a spoon to spread it evenly. It will be thick, almost like a soft cookie dough. That’s good. A thin batter will allow the streusel to sink.
Sprinkle the streusel over the batter, keeping it away from the edges as I mentioned. Then spoon the remaining batter on top. Don’t pour it. Spoon it in dollops, then gently spread it to cover the streusel. You don’t need to press it down. Just make sure the streusel is completely covered.
Baking and Doneness Cues
Bake at 350°F (175°C) for 40 to 45 minutes. Every oven runs a little differently, so start checking at 40 minutes. The top should be a deep golden brown, and the cake should spring back when you press it lightly with your finger. A wooden skewer inserted near the center should come out clean or with a few moist crumbs. If it’s wet with batter, give it another 3 to 5 minutes.
Let the cake cool in the pan for exactly 15 minutes. This is critical. Too short, and the cake will fall apart when you try to unmold it. Too long, and it will steam and become soggy on the bottom. After 15 minutes, invert the pan onto a wire rack and let the cake cool completely before glazing.
