Cucumber Lime Mocktail Recipe – Crisp & Refreshing

By Lucas Brooks · Page 2 of 3

3. Juice the Limes

Roll the limes on the counter under your palm before cutting. This loosens the membranes and yields more juice. Cut them in half crosswise, not pole to pole—that exposes more of the flesh. Squeeze by hand or use a citrus juicer. You need about 3 tablespoons of lime juice for two drinks. Strain the juice if you see seeds.

4. Shake and Serve

Combine the cucumber juice, lime juice, and simple syrup in a cocktail shaker. Add a generous handful of ice—enough to fill the shaker about halfway. Shake hard for 15 seconds. This chills the mixture and adds a small amount of dilution, which softens the acidity. If you don't have a shaker, use a jar with a tight lid.

Fill two serving glasses with fresh ice. Strain the shaken mixture into the glasses. Top each with 1/2 cup of chilled sparkling water. Stir gently with a long spoon—just a few rotations to combine without losing carbonation. Garnish with a lime wheel and a cucumber ribbon.

Making Cucumber Ribbons

Use a vegetable peeler on the unpeeled part of the cucumber to create long, thin strips. Curl them around a straw or your finger to create a spiral. They look elegant and add a visual cue about the flavor.

Common Mistakes to Avoid

Don't skip the peel. Cucumber skin has a waxy coating and a slightly bitter taste that muddies the drink. Always peel before grating.

Don't use a blender. Blending the cucumber creates a frothy, cloudy puree that's hard to strain and leaves a watery texture. Grating gives you control and a cleaner result.

Don't add sparkling water too early. If you mix everything together and let it sit, the carbonation dissipates. Add the sparkling water at the last second, right before serving.
