Easy Summer Appetizer Bites: Tomato & Peach Caprese Skewers

By Lucas Brooks · Page 2 of 3

Basil

Use large, unblemished leaves. If the leaves are small, use two per skewer. Fold larger leaves in half before threading so they don't tear. Basil bruises easily, so handle it gently.

The Technique: Assembly and Drizzle

Thread each skewer in this order: basil (folded if needed), peach wedge, cherry tomato, mozzarella pearl. This order keeps the basil sandwiched between the peach and tomato, which helps it stay in place and prevents the mozzarella from sliding off. Use 6-inch wooden skewers—short enough to fit on a platter but long enough to hold comfortably.

Arrange the skewers on a platter in a single layer, not stacked. Drizzle with olive oil first—just a light coating—then spoon the cooled honey-balsamic reduction over the top. Use a thin ribbon, not a pool. Too much syrup will make the skewers soggy and mask the fresh flavors. Finish with a pinch of flaky sea salt and a few turns of black pepper. The salt is crucial: it amplifies the sweetness of the peach and the tang of the tomato.

Common Mistakes to Avoid

  • Over-reducing the balsamic: If it hardens into a sticky candy, whisk in 1 teaspoon warm water to loosen. Next time, pull it off the heat when it still looks slightly thin—it thickens as it cools.
  • Using cold mozzarella straight from the fridge: Let it sit at room temperature for 10 minutes before assembling. Cold mozzarella is rubbery and doesn't release its creamy flavor.
  • Assembling too far ahead: These are best within 30 minutes of assembly. After that, the peaches release juice and the basil wilts. If you must prep ahead, thread everything except the basil and drizzle, cover, and refrigerate for up to 2 hours. Add basil and drizzle just before serving.

Variations to Try

Once you have the technique down, the possibilities open up. Swap the peach for ripe fig quarters in late summer. Use heirloom cherry tomatoes in different colors for visual variety. Add a tiny pinch of red pepper flakes to the balsamic reduction for heat. Or thread a small cube of prosciutto between the peach and mozzarella for a savory-sweet twist.

For a grilled version, thread the ingredients onto metal skewers, brush with olive oil, and grill over medium heat for 2–3 minutes per side. The peaches get smoky-sweet, and the mozzarella softens into a creamy pocket. Drizzle with the reduction after grilling.
