Easy Summer Cookout Spread: 5 Dishes That Work Together

Grilled Corn with Smoked Paprika Crema

Grilling corn over high heat does two things: it chars the kernels, adding a smoky sweetness, and it dries out the exterior slightly so the kernels hold their shape when cut off the cob. I grill the corn alongside the chicken, turning every 2-3 minutes until there are dark brown spots on about half the kernels. Let it cool just enough to handle, then stand each ear on its end and slice downward with a chef's knife to release the kernels. The crema is a simple mix of mayonnaise, lemon juice, smoked paprika, and salt. The smoke from the paprika echoes the char on the corn, and the fat from the mayo carries the flavor without being heavy. Use a 4-to-1 ratio of mayo to lemon juice, then add paprika to taste — about 1/2 teaspoon for every 1/4 cup mayo.

Grilled Chicken Thighs: Juicy Every Time

Boneless skinless chicken thighs are forgiving on the grill. Their higher fat content means they stay moist even if you walk away for an extra minute. I marinate them for at least 30 minutes, but up to 4 hours is fine — any longer and the acid can start to break down the meat too much, making it mushy. Grill over medium-high heat (around 400°F) for 5-6 minutes per side. The internal temperature should hit 165°F on an instant-read thermometer inserted into the thickest part. Let them rest for 5 minutes before slicing; this lets the juices redistribute so the meat stays tender. Slice against the grain into 1/2-inch strips.

Assembling the Spread

This is where the magic happens. I lay the roasted vegetables on a large platter as the base. Then I scatter the grilled corn, arrange the sliced chicken on top, and finish with crumbled feta and a drizzle of the smoked paprika crema. The feta adds a salty tang that cuts through the richness of the chicken and crema. Fresh basil and parsley sprinkled over the top add a final pop of color and freshness. Serve with warm hamburger buns on the side if you want to turn it into sandwiches, or keep it low-carb and eat it as a bowl. The crema doubles as a spread for the buns, too.
