Grilled Veggie Quinoa Dinner: A Simple One-Bowl Meal

By Lucas Brooks · Page 2 of 3

Perfect Quinoa Every Time

Rinsing the quinoa is essential. It removes the natural coating called saponin, which can taste bitter. Use a fine-mesh strainer and run cold water over the grains for about 30 seconds. Then combine 1 cup rinsed quinoa with 1 3/4 cups water and 1/4 teaspoon salt in a saucepan. Bring to a boil, then immediately reduce the heat to low, cover, and simmer for 15 minutes. Do not lift the lid during cooking. After 15 minutes, remove the pan from heat and let it sit, still covered, for 5 minutes. This resting time lets the grains absorb any remaining moisture and become fluffy. Then fluff with a fork—never a spoon, which can crush the grains.

The Vinaigrette: Simple and Bright

While the quinoa rests, whisk together 1 tablespoon olive oil, 2 tablespoons fresh lemon juice, 1 minced garlic clove, 1/2 teaspoon dried oregano, and a pinch of salt. The acidity of the lemon cuts through the smoky richness of the vegetables. Use fresh lemon juice—bottled juice has a flat, metallic taste that won’t do this dish justice. Taste the vinaigrette and adjust the salt or lemon to your preference.

Assembling the Bowl

In a large bowl, combine the fluffed quinoa and chopped grilled vegetables. Drizzle the vinaigrette over the top and toss gently with a spatula or two forks. The goal is to coat everything evenly without mashing the quinoa. Taste again—this is your chance to add a pinch more salt or a squeeze of lemon. Top with crumbled feta cheese for a salty, creamy finish, and sprinkle fresh parsley over everything. The feta is optional, but it adds a nice tang that plays off the smoky vegetables. Serve warm or at room temperature.
