Perfect Grilled Shrimp Skewers Dinner Recipe

By Lucas Brooks · Page 2 of 3

Skewering Technique

Thread the shrimp onto skewers by pushing the skewer through the thickest part of each shrimp, near the head end. This keeps them secure and prevents them from spinning when you flip them. Leave a small gap between each shrimp — about 1/4 inch — so the heat circulates evenly. If you pack them too tightly, the middle ones steam instead of sear. For even cooking, try to use shrimp of similar size on each skewer.

Grill Heat and Timing

Preheat your grill to medium-high, around 400-450°F (204-232°C). You want the grates hot enough to sear the shrimp on contact. Clean the grates well with a wire brush, then oil them using a folded paper towel dipped in vegetable oil and held with tongs. This prevents sticking.

Place the skewers on the grill. Cook for 2 to 3 minutes on the first side. You'll see the bottom edges turn pink and opaque. Flip them and cook for another 2 to 3 minutes. The shrimp are done when they're opaque all the way through, firm to the touch, and have curled slightly into a loose 'C' shape. If they curl into a tight 'O', they're overcooked. For accuracy, use an instant-read thermometer — the internal temperature should reach 120°F (49°C). Remove them from the grill immediately; they'll continue cooking from residual heat.

Common Mistake to Avoid

The biggest mistake is walking away from the grill. Shrimp cook in about 4 to 6 minutes total. If you step away to prep a side dish, you might come back to dry, tough shrimp. Stay at the grill, watch the color change, and trust your timer. Also, don't press down on the shrimp with a spatula — that squeezes out the juices.
