Sweet Potato Meal-Prep Bowls That Stay Fresh All Week

By Lucas Brooks · Page 2 of 3

Building the Bowl

Quinoa is my go-to base here because it cooks in 15 minutes and doesn't get gluey when refrigerated. Rinse it first to remove the bitter saponin coating. Use a 1:1.75 ratio of quinoa to water for fluffy grains that hold their shape.

The black beans are a straight-from-the-can affair — just drain and rinse well. Canned beans can be salty, so I don't add extra salt to the bowl beyond what's in the dressing and sweet potatoes. If you cook dried beans, 1/2 cup dry yields about 1.5 cups cooked, roughly the same as one can.

For the dressing, fresh lime juice is non-negotiable. Bottled juice has a flat, metallic taste that won't brighten the bowl the same way. Whisk the dressing in a small bowl or shake it in a jar. It emulsifies enough to coat everything evenly.

Assembly Order Matters

When packing the bowls, layer quinoa first, then sweet potatoes and beans. Keep the spinach on top, away from the warm ingredients, so it stays crisp. The pepitas go on last. Store the dressing separately — a small 2-ounce container per bowl works perfectly. When you're ready to eat, reheat the quinoa and sweet potato portion for 1-2 minutes in the microwave, then top with spinach, pepitas, and dressing. The residual warmth slightly wilts the spinach without making it soggy.

Common Mistakes to Avoid

  • Overcrowding the baking sheet. Cubes need space to release steam. If they're touching, they steam instead of roast. Use a rimmed baking sheet and spread cubes in a single layer with gaps.
  • Skipping the parchment. Caramelized sweet potatoes stick to bare metal. Parchment paper makes cleanup easy and prevents sticking without adding extra oil.
  • Adding dressing too early. The lime dressing will break down the spinach and soften the pepitas if left overnight. Keep it separate until serving.
