Watermelon Margarita: The Best Refreshing Summer Cocktail
The Technique: Blend, Strain, Shake
Start with cold watermelon. If your melon is room temperature, chill the cubed pieces for 30 minutes before blending. This keeps the drink cold without relying too much on ice, which can dilute the flavor. Blend the cubes on high until completely smooth—about 30 seconds. Then pour through a fine-mesh strainer. Press firmly on the pulp with a spatula to extract every drop. You'll get about 1 cup of juice from 3 cups of cubed melon. Discard the pulp; it's too watery to use for anything else.
Now, the shake. Combine the watermelon juice, lime juice, tequila, orange liqueur, and agave in a cocktail shaker. Add a generous handful of ice—about 1 cup. Shake vigorously for 15 seconds. You'll feel the shaker get painfully cold. That's your cue. Don't skimp on the shaking time; it chills and dilutes the drink just enough to soften the alcohol burn and meld the flavors.
Common Mistake: Over-Dilution
Many people add too much ice or shake for too long. The result is a watery, flat margarita. Stick to the 15-second shake and use large ice cubes in the glass (they melt slower). If you're serving a crowd, prepare the margarita mixture without ice and chill it in the fridge. Pour over ice only when serving.
Rimming and Garnishing
A salted rim is classic, but Tajín (a chili-lime seasoning) adds a spicy kick that plays wonderfully with watermelon. To apply, rub a lime wedge around the rim of each glass, then dip the rim into a shallow dish of salt or Tajín. Twirl the glass to coat evenly. Let the rim dry for a minute before pouring the drink—this prevents the salt from falling into the glass. For garnish, a small watermelon wedge or a lime wheel adds color and a fresh aroma. Avoid over-garnishing; the drink should be the star.
Make It a Mocktail
To turn this into a non-alcoholic refresher, skip the tequila and orange liqueur. Add 2 ounces of sparkling water and an extra 1/2 ounce of lime juice. The bubbles mimic the tingle of alcohol, and the agave keeps it sweet. Serve over ice with the same salted rim.
