Lemon Blueberry Cookie Bars: Soft, Tangy & Easy Recipe
There's something about the combination of bright lemon and sweet blueberries that feels like summer in every bite. These lemon blueberry cookie bars have a soft, tender crumb with just the right tang from fresh zest and pockets of jammy fruit throughout. They're easier than rolling individual cookies and disappear fast from any dessert table.

Why This Ratio Works
The key to these bars is the balance of butter to flour. I keep the ratio at 1 cup butter to 2 1/2 cups flour, which creates a dough that's sturdy enough to hold blueberries without spreading too thin, yet stays soft in the center. The addition of brown sugar adds a hint of molasses that complements the lemon without overpowering it.
One mistake I see often is using all granulated sugar, which can make the bars crisp and dry. The brown sugar helps retain moisture, especially when using frozen berries that release a bit of liquid.
Choosing Your Blueberries
Fresh or frozen both work, but I have a clear preference for technique. If using fresh, smaller wild blueberries are ideal — they distribute evenly and don't sink as much. For frozen, do not thaw them. Tossing them straight from the freezer into the dough keeps the batter from turning purple and prevents the berries from bursting too early.
If you only have large fresh blueberries, halve them. This ensures every bar gets a few berries rather than having them all cluster at the bottom.
The Lemon: Zest First, Juice Second
Lemon zest carries the essential oils that give these bars their bright aroma. I zest the lemons before juicing them — it's easier and you get more oil. Use a microplane or fine grater, and only get the yellow part. The white pith is bitter and will ruin the delicate flavor.
Two tablespoons of fresh lemon juice adds acidity that balances the sweetness. Bottled lemon juice works in a pinch, but fresh tastes noticeably brighter.
