Lemon Blueberry Cookie Bars: Soft, Tangy & Easy Recipe

By Lucas Brooks · Page 2 of 3

Mixing Method: Cream, Then Fold

Start by creaming the softened butter with both sugars until light and fluffy. This takes about 2 minutes with an electric mixer on medium speed. You want the mixture to look pale and airy. Scrape the bowl once to ensure even mixing.

Add eggs one at a time, beating well after each. Then mix in the lemon zest, juice, and vanilla. The batter may look slightly curdled at this point — that's normal, especially with cold eggs. It will come together when you add the flour.

When adding dry ingredients, mix on low just until the flour disappears. Overmixing develops gluten, which makes bars tough instead of tender. Switch to a spatula for folding in the blueberries, using a gentle hand to avoid crushing them.

Baking for the Perfect Texture

Spread the dough evenly into your lined pan. It's thick, so use an offset spatula or your fingers lightly dusted with flour. If using frozen berries, press them into the dough slightly so they don't sit on top and dry out.

Bake at 350°F (175°C) for 22-25 minutes. The edges should be golden and pulling away from the pan slightly. The center will look set but still soft — it should spring back when you gently press it with your finger. A toothpick inserted in the center should come out with a few moist crumbs, not wet batter.

Here's the most important technique tip: pull them when they look slightly underdone. They continue to bake from residual heat as they cool. Overbaked bars become dry and crumbly. Trust the visual cues over the timer.

Cooling and Cutting Cleanly

Cool the bars completely in the pan on a wire rack. This takes about an hour. If you cut them warm, they'll fall apart. For clean squares, use a sharp chef's knife and wipe the blade clean between cuts. A plastic knife also works well and won't drag through the bars.

The parchment overhang makes lifting the entire block out of the pan easy. Cut into 16 squares for generous portions, or 24 smaller ones for a party platter.

Variations to Try

Swap raspberries or chopped strawberries for the blueberries. Both work well with lemon. For a different citrus twist, use lime or orange zest and juice instead of lemon. Add a handful of white chocolate chips for extra sweetness — they pair beautifully with the tart lemon.

If you prefer a thicker bar, bake in a 9x9-inch pan for about 30-35 minutes. The bake time will be longer, and the texture will be more cake-like.
