Summer Party Platter That Actually Stays Fresh

By Lucas Brooks · Page 1 of 3

There’s a moment at every summer party when the chips go limp and the dip turns watery. The vegetable platter sweats. The cheese gets slick. That’s the moment I set out to avoid with this summer party platter. I wanted something that stays crisp, looks generous, and doesn’t demand last-minute fussing.

The trick is a cold-platter method built on a 2:1 ratio of savory to sweet elements. For every two savory components—vegetables, meats, cheese—you add one sweet or bright element, like the honey-yogurt dip or fresh basil. That balance keeps the palate interested without overwhelming. And the real secret? Pat everything dry. Moisture is the enemy of a fresh-looking platter.

Choose Your Board Wisely

I use a rimmed baking sheet, 13 by 18 inches, for most summer party platters. The rim catches stray olive juices and keeps the board from sliding. A wooden board works too, but line it with parchment first to avoid stains. Whichever you pick, let it sit at room temperature for 10 minutes before assembling. A cold board will make the cheese sweat.

The Vegetable Foundation: Crisp and Dry

Cucumbers and bell peppers are my go-to for summer. They stay crunchy for hours if handled right. Slice the English cucumber into 1/4-inch rounds—thick enough to hold dip, thin enough to bite easily. Cut bell peppers into strips about 1/2-inch wide. The key step: after washing, lay the slices on a clean kitchen towel and pat them completely dry. Even a single wet cucumber round can make the whole board soggy within an hour.

Cherry tomatoes add color and juice. Halve them just before arranging, and place them cut-side up to keep the juices from leaking. Olives go in a small pile, not scattered, so they don’t roll into everything else.
