Summer Party Platter That Actually Stays Fresh

By Lucas Brooks · Page 2 of 3

The Protein: Cured Meats and Cheese

Sharp cheddar holds its texture better than soft cheese in warm weather. Cut it into 1/2-inch cubes—uniform pieces look professional and are easy to pick up. For the meats, fold salami slices into quarter-circles. Prosciutto should be torn into ribbons, not sliced neatly. The irregular edges catch the eye and feel more casual.

Arrange the meats and cheese in separate clusters, not mixed together. This lets guests pick exactly what they want and keeps the board looking intentional.

The Sweet-Savory Dip: Honey-Yogurt with Smoked Paprika

Most summer platters lean on ranch or hummus. I make a honey-yogurt dip that’s tangy, sweet, and just a little smoky. The ratio: 1/2 cup full-fat Greek yogurt, 2 tablespoons honey, 1 tablespoon lemon juice, 1/4 teaspoon smoked paprika, and a pinch of salt. Whisk it until smooth. The smoked paprika is non-negotiable—it adds a warmth that cuts through the dairy and honey.

Full-fat yogurt is important here. Low-fat or nonfat versions separate as they sit, turning watery within an hour. The dip stays stable for up to 4 hours in the fridge.

Assembly: Build from the Center Out

Place the dip bowl slightly off-center. Fan cucumber rounds in a crescent around one side. Stack pepper strips in a separate arc. Pile the tomatoes and olives in small clusters near the edges. Tuck the folded salami and cheddar cubes between the vegetable groups, and drape prosciutto ribbons in the gaps.

Finish with fresh basil leaves tucked here and there. The basil adds a bright green pop and a faint anise scent that pairs beautifully with the honey-yogurt dip.

Common Mistake to Avoid

Don’t overload the board. A crowded platter looks messy and makes it hard for guests to grab what they want. Leave about 20 percent of the board visible. That empty space frames the food and makes the platter feel abundant, not cluttered.

Also, never add the crackers or crostini directly onto the board. They absorb moisture from the vegetables and turn soft within 15 minutes. Serve them in a separate basket or on the side.
