The Easiest Ice Cream Sandwich Cake Recipe (No-Bake)

By Lucas Brooks · Page 1 of 3

The first time I pulled this ice cream sandwich cake out of the freezer, the layers had set into something magical. The ice cream sandwiches had softened just enough to become a tender, cake-like base, while the fudge stayed thick and chewy, not rock-hard. And the whipped cream layer? Silky, not icy. That's the trick: getting the textures right. This recipe nails it every time.

Layered ice cream sandwiches in a 9x13 dish with fudge and whipped cream, before the final layer.

What makes this different from other no-bake ice cream cakes is the ratio. I keep the fudge-to-cream ratio at 1:1 by volume, which means every bite has enough chocolate without overwhelming the vanilla. And I cook the fudge with butter and milk, which keeps it spreadable even straight from the freezer. No hard, crumbly chocolate shards here.

The Key to a Non-Soggy Ice Cream Sandwich Cake

Ice cream sandwiches are porous. If you pour a cold, thin sauce over them, they'll soak it up and turn mushy. The fix is twofold. First, use a thick hot fudge sauce, not chocolate syrup. Second, cool the fudge to lukewarm—around 90°F—before drizzling. If it's too warm, it'll melt the ice cream. Too cold, and it won't spread. Test it on your wrist: it should feel just slightly warm, not hot.

I also let the fudge sit for a full 10 minutes after cooking. During that time, it thickens naturally. If you're in a hurry, pop the saucepan in the fridge for 5 minutes, stirring every minute.
