The Easiest Ice Cream Sandwich Cake Recipe (No-Bake)

By Lucas Brooks · Page 2 of 3

Building the Layers Right

Start with a 9x13-inch dish. Line it with parchment paper leaving overhang on the long sides. This makes lifting the whole cake out a breeze. No wrestling with a frozen slab.

Arrange 8 ice cream sandwiches in a single layer. Break one in half if needed to fill gaps. Don't leave empty spaces—the layers above will sink into them.

For the whipped cream layer, I use one 8-ounce block of cream cheese beaten with 1/4 cup powdered sugar until fluffy. Then fold in a full 16-ounce tub of thawed frozen whipped topping. This adds stability and a slight tang that balances the sweet fudge. Fold gently until no white streaks remain. Overmixing will deflate it.

Spread half the cream mixture over the first layer of sandwiches. Then drizzle half the cooled fudge on top. Don't spread it aggressively—just let it fall in ribbons and gently swirl.

Repeat: another 8 sandwiches, remaining cream, remaining fudge. Top with the final 8 sandwiches. Press down lightly so everything adheres.

The Freeze: Patience Pays Off

Cover the dish tightly with plastic wrap pressed directly onto the surface, then foil. Freeze for at least 6 hours, but overnight is ideal. During that time, the ice cream sandwiches soften and meld with the cream layers, creating a cohesive cake. If you cut it too soon, the layers will slide apart.

When you're ready to serve, lift the cake out using the parchment. Let it sit at room temperature for 5-10 minutes. This softens the edges just enough for a clean slice. Use a sharp chef's knife dipped in hot water and wiped dry between cuts. Each slice will show distinct layers: dark fudge, white cream, and the golden-brown grid of the ice cream sandwiches.

Variations That Work

This base recipe is a blank canvas. Here are a few easy swaps:

  • Mint chocolate: Add 1/2 teaspoon peppermint extract to the cream mixture. Use mint-flavored Oreos as a topping.
  • Cookies and cream: Crush 10 Oreos and fold half into the cream mixture. Sprinkle the rest on top.
  • Peanut butter: Swirl 1/2 cup creamy peanut butter into the fudge sauce before layering.
  • Berry: Layer 1 cup of strawberry or raspberry preserves between the cream and fudge layers.

For all variations, keep the base ratio the same. Don't add extra liquid or the cake won't set properly.
