Ingredients
  

  • 1 box 15.25 oz yellow cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup sour cream full-fat recommended
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup unsalted butter melted
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan with butter or nonstick spray.
  2. In a large bowl, combine the cake mix, eggs, oil, and sour cream. Stir until just combined — do not overmix. A few small lumps are fine. The batter will be thick.
  3. Pour the batter into the prepared pan and spread it evenly with a rubber spatula.
  4. In a separate small bowl, make the crumble: mix the sugar, flour, melted butter, cinnamon, and salt with a fork until it forms coarse, pea-sized crumbs. If it’s too wet, add a tablespoon more flour; if too dry, add a teaspoon more melted butter.
  5. Sprinkle the crumble evenly over the batter. Press it down lightly with your fingers so it adheres during baking.
  6. Bake for 30–35 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. The top should be golden brown and the edges pulling away from the pan.
  7. Let the cake cool in the pan on a rack for at least 20 minutes before cutting. Serve warm or at room temperature.

Notes

Store leftovers covered at room temperature for up to 3 days. For longer storage, refrigerate for up to a week. Reheat individual slices in the microwave for 15 seconds. This cake freezes well: wrap tightly in plastic wrap and foil, then freeze for up to 3 months. Thaw overnight in the refrigerator. Common allergens: wheat (gluten), dairy, eggs.
