- Place the cubed watermelon on a parchment-lined baking sheet in a single layer. Freeze for at least 2 hours, or overnight. (This is key for a thick smoothie without ice.)
- Add the frozen watermelon cubes, frozen banana slices, Greek yogurt, lime juice, and honey (if using) to a high-speed blender.
- Pulse 3-4 times to break up the fruit, then blend on low, gradually increasing to medium-high. Use the tamper to push ingredients toward the blades. Blend for 45-60 seconds, until completely smooth and creamy. The mixture should look like thick soft-serve.
- Taste. If it's not sweet enough, add a teaspoon more honey. If it's too thick, add 1 tablespoon of cold water or coconut milk and blend again for 10 seconds.
- Divide between two glasses and serve immediately. The smoothie will separate if it sits too long, so stir before drinking if you don't drink it right away.

Storage: This smoothie is best enjoyed fresh. If you have leftovers, pour into a freezer-safe jar and freeze for up to 1 month. Thaw in the fridge for 20 minutes, then stir vigorously or re-blend with a splash of liquid. For a dairy-free version, use full-fat coconut milk or unsweetened almond yogurt. The banana adds natural sweetness and creaminess, but if you prefer a less sweet smoothie, swap the banana for half a frozen avocado (pit removed, skin off). Common allergens: dairy (yogurt).
