- Line the bottom of a 9-inch springform pan with a parchment paper circle. Press the pan's ring into place, then line the sides with a parchment strip that extends 2 inches above the rim. Set aside.
- Make the crust: In a medium bowl, stir together the chocolate wafer crumbs and sugar. Pour in the melted butter and mix until every crumb is moistened. Press the mixture firmly and evenly into the bottom of the prepared pan. Use the flat bottom of a measuring cup to compact it. Freeze for 15 minutes while you prepare the ice cream base.
- Let the vanilla ice cream sit at room temperature for 10-12 minutes until softened but not melted. It should be the consistency of thick cake batter.
- In a separate large bowl, whip the 2 cups of heavy cream, ½ cup powdered sugar, and 1 teaspoon vanilla on medium-high speed until stiff peaks form. This should take about 3-4 minutes. The cream must be stiff enough to hold its shape when you lift the beater.
- Gently fold the softened ice cream into the whipped cream using a large rubber spatula. Fold just until no white streaks remain. This is your base mixture. It will be thick, airy, and pale.
- Divide the base mixture evenly into three separate bowls (about 2 cups each). Add 4-5 drops of pink gel coloring to the first bowl and stir gently until the color is uniform. Repeat with lavender for the second bowl and blue for the third. For a true pastel, use less color than you think — you want a soft, muted hue.
- Remove the crust from the freezer. Spoon the pink mixture into the pan and spread it into an even layer with an offset spatula. Tap the pan gently on the counter to release air bubbles. Freeze for 45 minutes, until firm to the touch but not rock hard.
- Gently spoon the lavender layer over the pink layer and spread evenly. Freeze again for 45 minutes.
- Spoon the blue layer on top, spread evenly, and freeze for at least 4 hours, or overnight, until completely solid.
- About 30 minutes before serving, make the final frosting: Whip the remaining 1 cup heavy cream with 3 tablespoons powdered sugar until stiff peaks form. Spread or pipe a smooth layer over the top of the frozen cake. Immediately top with rainbow sprinkles.
- To serve, run a thin knife under hot water, dry it, and run it around the inside edge of the pan. Release the springform, remove the parchment, and slice with a warm knife. Wipe the blade clean between cuts for neat slices.
Notes
Storage: Keep the cake in the freezer, well-wrapped in plastic wrap and foil, for up to 1 week. Let it sit at room temperature for 5-7 minutes before slicing for the cleanest cuts. Allergens: This recipe contains dairy and gluten (from cookie crumbs). For a dairy-free version, use full-fat coconut cream whipped with powdered sugar and a dairy-free vanilla ice cream alternative, but note the texture will be softer.
