Ingredients
  

  • For the Honey Syrup:
  • 1/2 cup honey
  • 1/2 cup water
  • For the Punch:
  • 3 cups chilled orange juice no pulp
  • 2 cups chilled pineapple juice
  • 1 cup chilled cranberry juice 100% juice, not cocktail
  • 1 cup chilled blueberry juice or substitute with 1/2 cup blueberry syrup + 1/2 cup water
  • 2 cups chilled sparkling water plain or lemon-lime
  • 1 cup fresh or frozen mixed berries strawberries, blueberries, raspberries
  • 1 orange sliced into thin rounds
  • 1 lemon sliced into thin rounds
  • Ice cubes optional, for serving

Method
 

  1. Make the honey syrup: In a small saucepan, combine honey and water. Warm over medium heat, stirring occasionally, until honey dissolves completely—about 3-4 minutes. Do not boil. Remove from heat and let cool to room temperature, about 10 minutes.
  2. Prepare the fruit: Wash and slice the orange and lemon into thin rounds. If using fresh berries, rinse them gently. Set aside.
  3. Layer the juices: In a large pitcher, pour the chilled orange juice first. Slowly pour the pineapple juice over the back of a spoon to create a second layer. Repeat with cranberry juice, then blueberry juice. The key is to pour each juice slowly and gently against the side of the pitcher or over the back of a spoon to maintain distinct layers. Do not stir.
  4. Add the syrup: Stir the cooled honey syrup into the pitcher gently—just a few slow stirs to combine without breaking up the layers too much. You want a gentle swirl, not a uniform mix.
  5. Add the fizz: Just before serving, pour the sparkling water down the side of the pitcher. Again, do not stir vigorously.
  6. Garnish: Float the citrus slices and berries on top. Serve over ice in individual glasses, if desired. For the most dramatic rainbow effect, use clear glasses and pour the punch gently over ice.

Notes

Storage: This punch is best served immediately after adding the sparkling water. If you need to make it ahead, prepare the honey syrup and juice mixture (without sparkling water) up to 24 hours in advance and keep refrigerated. Add the sparkling water and fruit garnishes just before serving. For a less sweet punch, reduce the honey syrup to 1/4 cup honey and 1/4 cup water. Common allergens: None.
