- Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine corn rounds, zucchini, bell pepper strips, and onion wedges. Drizzle with 2 tablespoons olive oil, sprinkle with salt and pepper, and toss to coat evenly.
- Arrange vegetables in a single layer on the prepared baking sheet. Nestle the sausage links among the vegetables, spacing them evenly.
- Roast for 20 minutes. Flip the sausage and stir the vegetables once halfway through. Continue roasting until sausage reaches an internal temperature of 160°F and vegetables are tender and lightly browned at the edges, about 5 minutes more.
- While the sheet pan roasts, make the dressing: in a small bowl, whisk together the remaining 1 tablespoon olive oil, lemon juice, parsley, and oregano.
- Remove sheet pan from oven. Let rest 2 minutes. Drizzle the dressing over everything. Serve hot directly from the pan or transfer to a platter.
