Ingredients
  

  • 6 medium tomatillos husked and rinsed
  • 2 habanero peppers stems removed (seeds in for full heat, or remove half for less)
  • 1/2 medium white onion peeled and quartered
  • 2 cloves garlic unpeeled
  • 1/2 cup fresh cilantro loosely packed
  • 1 tablespoon fresh lime juice about 1/2 lime
  • 1 teaspoon honey
  • 1/2 teaspoon fine sea salt plus more to taste
  • 1/4 cup water as needed for consistency

Method
 

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Place the tomatillos, habanero peppers, onion quarters, and unpeeled garlic cloves on the prepared sheet. Roast for 8–10 minutes, until the tomatillos are softened and lightly charred in spots, and the garlic feels soft when squeezed gently.
  3. Remove from the oven and let cool for 5 minutes. Peel the garlic cloves and discard the skins.
  4. Transfer the roasted vegetables (including any juices on the sheet) to a blender or food processor. Add the cilantro, lime juice, honey, and salt.
  5. Pulse 5–6 times for a chunky salsa, or blend on low for 15–20 seconds for a smoother texture. Scrape down the sides once.
  6. Taste and adjust salt or lime. If the salsa is too thick, add water 1 tablespoon at a time and pulse to combine.
  7. Transfer to an airtight container. Let it rest at room temperature for 15 minutes before serving—the flavors will meld. Refrigerate for up to 1 week.

Notes

Storage: Keep in a sealed glass jar in the fridge for up to 7 days. The heat will mellow slightly over time. For a milder version, use only 1 habanero and remove all seeds and white membranes. Always wear gloves when handling habaneros—the oils can burn your skin. If you don't have gloves, wash your hands thoroughly with soap and warm water after handling, and avoid touching your face. This recipe is naturally gluten-free, dairy-free, and vegan. For a roasted red pepper twist, add 1 small roasted red bell pepper (seeded) to the blender.
