Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/2 cup heavy cream
  • 3 cups mixed fresh fruit strawberries, blueberries, kiwi, mango, peaches, sliced as needed
  • 2 tablespoons apricot jam
  • 1 tablespoon water

Method
 

  1. Preheat oven to 350°F. Lightly grease a 12-inch round pizza pan or line a 10x15-inch rimmed baking sheet with parchment paper.
  2. In a medium bowl, whisk flour, baking powder, and salt.
  3. In a large bowl, beat butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 2 minutes. Beat in egg and vanilla until combined.
  4. Gradually add flour mixture to butter mixture, mixing on low just until dough comes together. Do not overmix.
  5. Press dough evenly into prepared pan, about 1/4-inch thick. For a round pan, use your fingers; for a sheet, roll dough between two sheets of parchment to 1/4-inch thick, then transfer.
  6. Bake 10-12 minutes, until edges are lightly golden and center is set. Cool completely on a wire rack, about 30 minutes.
  7. For the topping: In a large bowl, beat cream cheese, powdered sugar, lemon zest, and lemon juice on medium until smooth. In a separate bowl, whip heavy cream to stiff peaks. Fold whipped cream into cream cheese mixture until no streaks remain.
  8. Spread topping evenly over cooled crust, leaving a 1/2-inch border.
  9. Arrange fruit in concentric circles or a pattern of your choice. Press gently so it adheres.
  10. In a small microwave-safe bowl, combine apricot jam and water. Microwave 15 seconds, stir, then brush over fruit for shine and to prevent browning.
  11. Refrigerate at least 30 minutes before slicing. Serve chilled.

Notes

Storage: Cover loosely and refrigerate up to 8 hours. The crust will soften over time. For best texture, assemble no more than 2 hours before serving. To make ahead, bake crust and prepare topping separately; assemble just before serving. Common allergens: dairy, gluten, eggs. For a dairy-free version, use vegan cream cheese and coconut cream (chilled solid part only). For gluten-free, substitute a 1:1 gluten-free flour blend.
