- Place the cubed watermelon in a blender. Blend on high until completely smooth, about 20 seconds. Pour through a fine-mesh strainer set over a bowl or measuring cup. Press gently with a spatula to extract juice. Discard the pulp. You should have about 1 cup of juice.
- In a small bowl, gently muddle the mint leaves with the lime juice and simple syrup. Use a muddler or the back of a wooden spoon. Press just 3-4 times — you want to release the oils, not shred the leaves into bits.
- Divide the muddled mint mixture between two highball glasses. Add 1/2 cup watermelon juice to each glass.
- If using rum, pour 2 ounces into each glass. Stir once gently.
- Fill each glass with crushed ice. Top with a splash of club soda — about 1/4 cup per glass. Stir gently once more.
- Garnish each glass with a small mint sprig and a lime wheel. Serve immediately with a straw.

To make simple syrup, combine 1/2 cup sugar and 1/2 cup water in a small saucepan. Bring to a simmer over medium heat, stirring until sugar dissolves. Cool completely before using.
