Homemade Ice Cream Cake

A two-layer ice cream cake with a crisp chocolate cookie crust and a creamy, sliceable center. No special equipment needed.

Ingredients
  

  • 1 ½ cups chocolate sandwich cookie crumbs about 18 cookies, filling removed
  • ¼ cup unsalted butter melted
  • 1 pint 2 cups heavy cream, cold
  • 1 14-ounce can sweetened condensed milk, cold
  • 1 teaspoon vanilla extract
  • teaspoon salt
  • 1 ½ cups crushed chocolate sandwich cookies about 12 cookies, filling included
  • ½ cup hot fudge sauce warmed slightly

Method
 

  1. Line the bottom of a 9-inch springform pan with a parchment paper circle. Wrap the outside of the pan with a double layer of plastic wrap to prevent leaks.
  2. In a small bowl, combine the 1 ½ cups cookie crumbs (filling removed) with the melted butter. Press firmly into the bottom of the prepared pan. Place in the freezer while you make the filling.
  3. In a large chilled bowl, beat the heavy cream on medium-high speed until stiff peaks form (about 3-4 minutes). Set aside.
  4. In another large bowl, whisk together the cold sweetened condensed milk, vanilla extract, and salt until smooth.
  5. Gently fold one-third of the whipped cream into the condensed milk mixture to lighten it. Then fold in the remaining whipped cream until no white streaks remain. Fold in the 1 ½ cups crushed cookies (with filling).
  6. Pour the filling over the frozen crust. Smooth the top with an offset spatula. Drizzle the warm fudge sauce over the top and swirl with a knife.
  7. Cover the pan with plastic wrap and freeze for at least 6 hours, or overnight, until fully firm.
  8. To serve, run a warm knife around the edge of the pan, release the springform, and remove the parchment. Let the cake sit at room temperature for 5 minutes before slicing. Use a sharp knife dipped in hot water and wiped dry between cuts.

Notes

For a cleaner cut, dip your knife in hot water, wipe dry, and slice. Store leftover cake tightly wrapped in the freezer for up to 2 weeks. Let sit 5 minutes at room temperature before serving. To make this nut-free, check that your cookies and fudge are produced in a nut-free facility. For a gluten-free version, use certified gluten-free chocolate sandwich cookies.
