Homemade Marinara Pasta

A quick, from-scratch marinara sauce that coats pasta perfectly, using a 3:1 ratio of crushed tomatoes to olive oil for a silky, non-acidic finish.

Ingredients
  

  • 2 tablespoons extra-virgin olive oil
  • 4 cloves garlic thinly sliced (not minced)
  • 1/2 teaspoon red pepper flakes optional
  • 1 28-ounce can crushed tomatoes (preferably San Marzano)
  • 1/2 teaspoon kosher salt plus more for pasta water
  • 1/4 teaspoon black pepper
  • 1/2 cup fresh basil leaves roughly torn
  • 1 pound dried spaghetti or other long pasta
  • Parmesan cheese for serving (omit for dairy-free)

Method
 

  1. Bring a large pot of salted water to a rolling boil (about 2 tablespoons salt for 4 quarts water).
  2. While water heats, place a large 12-inch skillet over medium heat. Add olive oil and swirl to coat.
  3. Add sliced garlic and red pepper flakes to the oil. Cook, stirring constantly, until garlic is fragrant and just starting to turn golden at the edges — about 45 seconds. Do not let it brown.
  4. Pour in the crushed tomatoes. Stir in salt and black pepper. Bring to a simmer, then reduce heat to low. Let it bubble gently for 15 minutes, stirring occasionally. The sauce will thicken and darken slightly.
  5. Meanwhile, add pasta to the boiling water. Cook according to package directions until al dente (usually 8-10 minutes). Reserve 1 cup of pasta water before draining.
  6. Drain pasta (do not rinse). Add it directly to the skillet with the sauce. Toss well, adding reserved pasta water a splash at a time if the sauce seems too thick. You want it to coat each strand with a glossy sheen.
  7. Remove from heat. Stir in fresh basil. Taste and adjust salt if needed.
  8. Serve immediately, topped with grated Parmesan if desired.

Notes

Storage: Keeps in an airtight container in the fridge for up to 4 days. Reheat gently on the stovetop with a splash of water. Freezing: The sauce (without pasta) freezes well for up to 3 months. Substitutions: For a dairy-free version, skip the Parmesan or use a plant-based alternative. For gluten-free, use your favorite gf pasta and cook it a minute less than the package suggests.
